A process is capable if it satisfys its specified product quality, service quality, and process performance objectives. A capable process consistently produces output that is within specifications. Execution of capable process always gives predictable results.
Process Capability and continuous Process Models

Process capability relates to the performances of (some) processes of a certain process area. E.g.: processes of PA Project Management (Kick-Off, Monitoring, Reporting, etc.).
Process capability is shown in a continous process maturity model (Level 2 Kick-Off processes, Level 1 for Monitoring processes, and Level 1 for Reporting processes, etc.).
The process capability assessment results in a so called process capability profile — usually related to a certain IT project or a company department.
